Tangy Vine, Asparagus, Potato & Herb Salad
Ingredients
1 ripe Beekist Tangy Vine truss
500g fresh asparagus - blanched
500g gourmet potatoes - just tender
1 tbspn finely chopped fresh parsley
2 tspns finely chopped fresh mint
Salt and freshly ground pepper
For the dressing ,mix together well:
3 tablespoons The Grove Garlic infused Avocado Oil
2 tspns balsamic vinegar
2 tspns manuka honey
1 tspns English mustard powder
4 medium cloves garlic very finely chopped
Salt and freshly ground black pepper
Method
Scrub Potatoes and boil with a sprig of mint until just tender, drain and cool. Cut ends off asparagus and blanch in boiling water for 2 minutes. Immediately cool under running water. Wash tomatoes. Cut tomatoes and potatoes in half or quarters, mix with the asparagus. Arrange on an attractive planter. Sprinkle with the fresh mint and parsley, a little salt and freshly ground black pepper, then drizzle with the dressing just before serving
Serving
Perfect on its own for lunch with crusty bread, or with pan fried fish, grilled chicken or lamb and at all BBQ’s.
Vine-Sweet Antipasto
Ingredients:
One ripe (but firm) Beekist Vine-Sweet Truss - roasted
Selection of boutique cheeses (blue, vintage, brie etc)
Pancetta, & selection of cold cuts (ham, roast beef, roas pork)
Deli sausage & salamis
The Grove Lime Avocado oil
The Grove Garlic Avocado oil
Balsamic Vinegar
Maldon sea salt
A little raw sugar
Freshly chopped Basil, Coriander & Mint
Freshly ground pepper
Ciabatta loaf or other breads /rolls
Optional: Spinach & Rocket leaves
To Serve:
To roast the vine: lightly oil with The Grove Garlic Avocado Oil, prick around tops (calyx) of tomatoes, place in oven at 200 until skin starts to blister (about 10-15minutes) remove and cool.
Then, as everyone helps themselves, arrange all ingredients on your
favourite platter. Sprinkle the fresh herbs over the salad greens and add a dash of The Grove Lime or Garlic avocado oil to the mix along with a dash of Balsamic……..The perfect lunch for lazy summer days
with a glass of chilled Riesling. Enjoy! -
